3 Travel-Friendly Snacks
Traveling is stressful enough. Finding healthy and affordable snacks for the whole hungry crew shouldn’t add to that stress! I find that with just a little bit of planning, I can bring healthy snacks with me, wherever I’m going. Whether you’re traveling by plane, train, or car, these 3 snack ideas are travel-friendly and totally delicious.
Apple “Cookies”
I like my apple slices super thin, so I use a mandoline. If you don’t have one, you can also use a knife to slice apple into thin circles. I also recommend brushing your apple slices with some lemon juice to prevent them from browning. Apple “Cookies”
Then simply slather on almond butter and sprinkle with chocolate chips. It’s not only crunch and sweet, it’s also a satisfying snack that fills me up for the trip ahead! Full Recipe
Homemade granola bars
Over low heat, combine almond butter and maple syrup. Then, add in the rolled oats, nuts, dried berries, cinnamon, and sea salt. Remove from heat and stir well to combine all ingredients. Homemade granola bars
Spoon the mixture into a gallon-sized Ziploc ® brand bag. Once it’s full, squeeze out the air and freeze for at least an hour.
When the mixture has solidified, remove it from the freezer and use a sharp knife to cut into granola bars. It’s kind of crazy how good these granola bars are. That little bit of cinnamon really makes them somethin’ special.
Packing these treats is super easy! Just place pieces of parchment paper between each snack so they don’t stick together. Full Recipe
Kale chips
Cut off the thick stems from each kale leaf. I find the veins to be a bit tough, so I remove them with a knife. Kale chips
Once you’ve removed the veins, cut into smaller pieces measuring approximately 2-3 inches. This doesn’t have to be perfect, since the kale will shrink in the oven.
Place the kale pieces in a Ziploc ® brand bag. Then drizzle with olive oil and squeeze a lemon over the kale.
Now, the fun part! Seal the Ziploc ® brand bag and mash the kale around to coat it evenly with the lemon and olive oil. Once it’s all mixed together, spread the kale evenly on a baking sheet and bake at 300 degrees for 25 minutes or until the kale is crispy. Full Recipe
