The ingredients:

500 g cauliflower

1 small zucchini

150 g mushrooms

200 ml apple juice (naturally cloudy)

150 g wheat flour

1 pinch of baking soda

1 tsp curry powder

For the dip:

2 tsp liquid honey

2 tbsp chopped herbs (parsley, dill, sage)

Mix everything and season with salt and pepper.

Clean the vegetables, divide the cauliflower into small florets, cut the zucchini and mushrooms into thicker slices. Mix the flour with the remaining ingredients and pull the vegetable pieces through the liquid batter. Heat the rapeseed oil in a pan – the right temperature is reached if you dip a wooden spoon in the oil and small bubbles rise on the stem. Bake the vegetable pieces dipped in batter in hot oil for about 4 minutes. Drain on kitchen paper.

For non-hungry small snacks: noodle soup

Healthy, tasty and always goes in between – the noodle soup is a real classic.

The ingredients:

1 small zucchini

1 tbsp maple syrup

60 g vermicelli

1 tablespoon of Italian herbs

1-2 tbsp parmesan (grated)

That’s how it’s done:

Dice the vegetables very finely and braise the pieces in rapeseed oil. Add vegetable stock, tomato juice and maple syrup and cook everything short on. Then add soup noodles and cook until soft. Stir in the herbs, season with salt and pepper and sprinkle with the grated Parmesan cheese.

Tip: Take letter or other motif noodles – the eye is known to eat with you.

For those who despise vegetables: Penne with meatballs

Does your child have no vegetables on the table? Then serve him this delicious pasta dish.

The ingredients:

300 g penne (whole grain)

2 tbsp chopped herbs (parsley, basil)

30 g pine nuts

500 g mixed organic minced meat

4 tbsp whole grain breadcrumbs

2 tbsp parmesan (grated)

For the sauce:

2 tbsp crème fraîche

That’s how it’s done:

Grind the pine nuts finely and mix them with the chopped herbs. Finely dice the spring onions. Knead all the ingredients in a bowl to make a minced pastry, season with salt and pepper. Form small meatballs from the mass and fry them well in hot rapeseed oil from all sides, then cover and simmer for 5 to 8 minutes over medium heat. Cook the pasta in salted water until bite-proof and drain. For the sauce, mix tomato juice, ketchup and crème fraîche and add the dripping wet pasta and the meatballs.

For salad muffle: egg salad pita

Salad doesn’t always have to be green. With this variant you also score with children who would like to delete the word "salad" from their vocabulary.

The ingredients:

4 pita breads (toasted)

2 eggs (hard-boiled)

50 g cheese (Gouda or Edam)

1 small apple

50 g cucumber

2 tbsp orange juice

1 pinch of salt, pepper and sugar

½ bunch chives (finely chopped)

That’s how it’s done:

Mix sour cream, orange juice and rapeseed oil. Season everything with salt, pepper and sugar, add the chives – the salad dressing is ready. Chop the eggs finely, cut the cheese, apple and cucumber into thin strips. Clean lettuce, rinse well and dry, and also cut into fine strips. Mix lettuce and sauce and pour into the toasted pita bread. Serve immediately.

For those with a sweet tooth: curd cheese

All children like to eat sweets. So why not prepare a light, sweet lunch? And because it’s so easy, the youngsters can also help themselves under your supervision.

The ingredients:

250 g quark

50 ml apple juice (naturally cloudy)

50 g spelled flour

2 tbsp chopped almonds

That’s how it’s done:

Separate the eggs, beat the egg whites with a little lemon juice into stiff egg whites. Mix the egg yolk with the lean quark, sugar, salt, apple juice and milk. Sift spelled flour and add. Carefully fold in the egg whites and the chopped almonds. Heat the margarine in a coated pan, add the dough and let it bake for 5 minutes over medium heat. Turn the dough, fry with 1 tsp margarine for another 3 to 5 minutes, tear it into pieces and bake.

Tip: Serve with apple sauce or fresh strawberries with cream.
